This bake was inspired by a photo on Instagram of someone using their Le Creuset casserole dish as a Dutch oven to bake a sourdough. This is not something I  had ever thought about doing, but it seamed like a really good idea. Turns out it was, and here is my story.

Spelt Boule & Some New Toys

I thought I would write a bit of a combined post. Basically I have had a delivery from BakeryBits of a new round banneton, a lame and some paddles. To celebrate I decided to bake a loaf. What better than a spelt boule, with the added shape of my new banneton. The recipe is essentially the same as my previous spelt loaf but at a slightly higher hydration.

Olive Loaf

My baking faith had been renewed after yesterdays failure. I wanted something different today, and spent a while browsing the internet for pics, and I found this one, Matt’s Rosemary + Olive Loaf. So I set about it. The recipe for this bake is taken almost straight from the blog. I only modified a few things, like using easy bake dried yeast and using a mix of white and wholemeal flour.

The One That (Sort Of) Got Away – Rye Loaf

So I decided to have a little play with the rye bread recipe tonight. Things didn’t go to plan. I decided to make a small loaf, smaller than my usual 500 g loaf.

I decided to experiment with more than just the recipe, I tried to set up a custom program for the bread maker, as the recipe required slightly different times than my normal setting. For some reason despite being on just a kneed + prove setting, it started cooking the loaf.
