Last weekend we threw a little Christmas soirée (well mulled wine and mince pies) and that involved a lot of baking on my part.
On the menu were mince pies, bread sticks, bread shots and more pfeffernüsse.
So I don’t know about anyone else, but our little neck of the world has been very wet over the past few days, and I’m not sure it’s set to get much better for the rest of the Jubilee weekend. So what better than a series of bakes to brighten the mood. So this is one of Claire’s creations – Jubilee cupcakes.
Claire and I were both racing today, so as a bit of a pre race treat we decided to make a cheesecake. We wanted to make a fridge cake, rather than baked, and we wanted something that combined both lemon and vanilla + the filth of full fat cheesecake.
Not that I am bored of bread, far from it, but today I wanted something sweet, plus we still have half a loaf of the sourdough left. So I wanted to make something more cake like. Inspired by a recipe (well picture) of gingerbread and marmalade cake I fancied something in that region. Sadly Claire doesn’t share my love for gingerbread and we didn’t have any any marmalade in the house. So I came up with this – Spiced Golden Syrup Cake.
Cinnamon swirls are one of my favourite treats, especially for breakfast. So I had a go at making this recipe, it’s more on the bread side than the pastry side, but I think it worked really well. I have previously made a very similar recipe, but for a swirl loaf (sadly I don’t have any pictures).

Anyway, I have been asked to write about our baking evening extravaganza, in order to prove that our kitchen gets graced with more than just bread-based items from time to time.
