Spiced Hot Cross Buns

Spiced toasted hot cross bun

Spiced toasted hot cross bun

I love bank holiday weekends, they are such a great opportunity for baking. What could be more topical than hot cross buns. Here is my recipe for a lovely spiced hot cross bun which I think really works. Based on a recipe on the Guardian I modified it to take into account what I had in the kitchen and other preferences.

Pain Viennois

Pain Viennois

Pain Viennois

This is actually my second attempt at making Richard Bertinet’s pain viennois. The first time I over cooked them, and got irrationally angry at them, because otherwise they were great and it was my ability to misread a simple instruction that messed it up. This time it worked out, and it was well worth it.

A Weekend For Bagels

I sat at the breakfast table yesterday wondering what to do with my day. Things have gotten quite busy recently so bread making has become more of a weekend activity, when I have the time. So flicking through Crust I wanted something simple yet worthy of a day of baking. What better than bagels.

Bread Maker Jam

This blog post started as a two parter, the first a Rye Sourdough and the second a Strawberry Jam. Sadly I can not find a copy of the sourdough recipe, so I will have to save that for another day. The jam, on the other hand, is a story worth telling.

Baguettes – I’m Back

So apologies first off, when I started this blog I planned to post nearly every day. Essentially every time I baked, but sadly things have not always worked out. Recently I have had a number of failed bakes, coupled with a trip to the states, meaning there has been very little baking from my kitchen. But I am back, and I have a new toy to play with. A baguette baking tray. So I have been testing it out this morning.

Perfecting Croissants

Much like the previous pasta post I have tried to avoid reposting recipes, without at least some modification. Now thats all fair and well with bread, but croissants are perhaps my favourite breakfast snack, and perfect for a bank holiday monday. So time to repost my croissant recipe.

Sourdough Crumpets

As a followup to my attempt at making sourdough pancakes I thought I would have a go at their bigger brother – crumpets. The motivation is basically to use up my sourdough starter without throwing it away.

Morning Bread

I have previously posted about my Lazy Morning Bread, this is the not so lazy version. Still raisin and cinnamon milk loaf, but made by hand rather than in the bread maker. A great opportunity to compare the two baking methods.

Failed Oat and Apple Bread

I hadn’t intended on posting this, as it was a failure in many respects. We all have them and it’s what we learn from them that is important. Having written a post earlier today about my main problem with the loaf – very wet dough I thought I should really illustrate the problem.

Sourdough Pancakes

Happy Easter! I thought I would celebrate it with something a little different, little bit bored of chocolate at the moment, and frankly pancakes rock. Since the start of my sourdough exploits I have been wondering what to do with the starter that you bin at every feed. I know you have to get rid of it, and honestly I’m not going to make that much bread, so what other interesting things can you do with it. Well sourdough pancakes.
