Tiger sourdough

A bit of a first for me, tiger bread (a Dutch crust to some) but with a sourdough base. The fact it was sourdough is not so important, but personally I think this is one of the best loaves I have made in a long time. I also use a sourdough starter method which does not require a very active ferment, great for the occasional sourdough baker.

Sourdough For Chowder

So here is the next chapter in my sourdough adventures. Yet another attempt, and yet more room for improvement, yet somehow I really feel like I am getting somewhere. I will not, and can not, be beaten by a bread made from three ingredients. Last night we had smoked haddock chowder, and required sourdough, here is what happened.

Experiments In Baguettes

So my previous post on baguettes was a stab in the dark, I have now done some more research and boy had I underestimated them. I had never realised the complexity and technicality of baguettes and have learnt many new baking terms and equipment. So to test my new understanding I set about making two different types of loaf a sourdough and a normal – here are my results.

Sourdough – Are We Nearly There Yet?

So I have taken a couple of weeks away from sour dough. For no real reason beyond I was growing tired of failure. So I decided to take a step back, regrow my passion and try again. That attempt happened today (well over the past day or so) – and I consider it a real step in the right direction.

Sourdough Take Two

I was really happy with my first attempt at making sourdough, it has made great toast this week, but I wanted to try it again, but slightly differently. I had heard of making a sponge the night before, so I looked into this method for my next bake. Slightly more time consuming yes, but well worth a try.

Sourdough Pancakes

Happy Easter! I thought I would celebrate it with something a little different, little bit bored of chocolate at the moment, and frankly pancakes rock. Since the start of my sourdough exploits I have been wondering what to do with the starter that you bin at every feed. I know you have to get rid of it, and honestly I’m not going to make that much bread, so what other interesting things can you do with it. Well sourdough pancakes.
