Sourdough For Chowder

So here is the next chapter in my sourdough adventures. Yet another attempt, and yet more room for improvement, yet somehow I really feel like I am getting somewhere. I will not, and can not, be beaten by a bread made from three ingredients. Last night we had smoked haddock chowder, and required sourdough, here is what happened.

Spelt Boule & Some New Toys

I thought I would write a bit of a combined post. Basically I have had a delivery from BakeryBits of a new round banneton, a lame and some paddles. To celebrate I decided to bake a loaf. What better than a spelt boule, with the added shape of my new banneton. The recipe is essentially the same as my previous spelt loaf but at a slightly higher hydration.

Sunday Morning Spelt

So given how fowl the weather has been this weekend I wanted to make a nice warming loaf of bread for Sunday breakfast / brunch. Claire missed my last spelt loaf as she was away so was looking forward to trying something it. I think this bake did the trick. Only small, to ensure its eaten whilst fresh, this little loaf made the most perfect toast.

Spelt Loaf

I had heard rumours that Tesco sold spelt flour, and so I went investigating, and true to their word they did. So a rather expensive 1 kg bag of Doves Farm spelt flour was the latest addition to my cupboard, but what to do with it. So last nights challenge was a spelt loaf, unsure if I have ever eaten a spelt loaf before I was a little unsure what to expect. I shouldn’t have been, it came out as one of my best bakes yet.
