Yet another non bread post. I am sorry – don’t worry I have a new book and a loaf waiting to go into the oven so there will be more bread soon. For now you will have to make do with this little bake. Made largely by Claire for a lab meeting, we decided to make something a bit special. We decided upon cookie monster cupcakes based on a dark chocolate wedding cupcake recipe from Susannah Blake’s Cupcake Heaven.
- 150 g Dark Chocolate
- 170 g Unsalted butter
- 230 g Caster sugar
- 4 Eggs
- 6 tbsp Crème fraîche
- 230 g Self raising flour
- 120 g Butter
- 250 g Icing sugar
- Desiccated coconut (Not sure how much)
- Blue food colouring
- 12 Cookies
- 48 White chocolate buttons (Giant)
- 48 Dark chocolate chips / drops
- Black icing pen
Make the cupcakes as per normal.
Melt the chocolate in the microwave. Beat the butter and sugar until pale, then start working in the eggs, then the crème fraîche. Finally sift the flour and fold in.
Split the mixture into 24 cake cases, and bake for about 18 minutes.
To make the topping mix the coconut in a food bag with some food colouring. Whisk the butter and the icing sugar, with a bit of milk, in a separate bowl.
Make the eyes by decorating the chocolate buttons by using a drop of black icing to stick the chocolate chip to the button.
When the cupcakes are cool, dip the top in the icing, then in the coconut. Make two slits in the top to place the eyes and cut a large grove to place half a cookie in the monsters mouth. There we have it – cookie monster cupcakes – enjoy.
(P.S. I have not commented much on the taste of these because I didn’t try them as I really dislike coconut. Other said they were very tasty, so I take that as a positive.)
