Jubilee Cakes

So I don’t know about anyone else, but our little neck of the world has been very wet over the past few days, and I’m not sure it’s set to get much better for the rest of the Jubilee weekend. So what better than a series of bakes to brighten the mood. So this is one of Claire’s creations – Jubilee cupcakes.

Whilst very simple these are the perfect treat for afternoon tea. As it happens we went out to watch a friend race at a local women’s road race, standing halfway up a 14% hill in the rain to cheer – sadly she wasn’t actually racing. Never mind, it was great fun anyway.

Recipe:

  • 250 g Butter
  • 250 g Self-raising flour
  • 250 g Caster sugar
  • 4 Eggs
  • 2 tsp Vanilla

Icing:

  • 250 g Icing Sugar
  • 250 g Butter
  • Food colouring

Method:

Cream butter and sugar, beat in the eggs + vanilla then stir in the flour.

Spoon into cases and bake at 180°C for ~15 mins.

For the icing whisk the icing sugar and butter, then split into equal quantities and add the food colouring.

When cool ice + decorate the case as you see fit.

Result:

Fantastic cupcakes, very fitting for the occasion.
