Spiced Hot Cross Buns

Spiced toasted hot cross bun

Spiced toasted hot cross bun

I love bank holiday weekends, they are such a great opportunity for baking. What could be more topical than hot cross buns. Here is my recipe for a lovely spiced hot cross bun which I think really works. Based on a recipe on the Guardian I modified it to take into account what I had in the kitchen and other preferences.

Wholemeal Khorasan Boule

Wholemeal khorasan loaf

Wholemeal khorasan loaf

It has been a while since I have posted about a bread. Especially one where I have made up the recipe.

So here is one. A wholemeal and Khorasan loaf. This came out of discussing Khorasan with Han-Na, and I thought why not make one myself.

Khorasan (Kamut) My First Try

A while ago I mentioned that I hah been prompted to try Khorasan / Kamut flour by a few other bloggers, so purchased myself some whilst at Shipton Mill. Since then I have been very busy, with sadly very little baking. This weekend was my first chance to actually give it a go, and here is what I made.

Flour Supplies and More Bread

Yesterday saw a trip to the velodrome in Newport with a return journey via Shipton Mill. The perfect combination of bread and bikes. The velodrome was great as usual but having never been to Shipton Mill I was intrigued to see what I would find. What I left with was 7 kg of new flour and a new book, and that made me very happy.

Out With The Old – Baking Stone

In a quick follow up to my previous post on birthday bread books  one of my later presents was a new baking stone. I have previously been using a round pizza stone, but it cracked into three. Whilst this didn’t make it unusable it did become annoying.

New Bread Books

We had various treats and activities planned to celebrate, and a number of them involved bread. Amongst other things I got two new bread cookery books (Dough and The Bread Baker’s Apprentice).

50 / 50 Sandwich Loaf

Whilst I bake a lot there is always something I am waiting to bake, or a recipe I want to try. I rarely work in chronological order, and this is one of those loaves I have been waiting for the opportunity to bake. Whilst initially quite a simple idea a 50/50 loaf tin bake. The story of this loaf came from a request from a fellow blogger for a loaf to make sandwiches from. Here it is:

Mellow Bakers – June – Raisin and Cinnamon Loaf

I feel like I am on a roll now, 3 posts in 2 days. This bake is my contribution to the Mellow Bakers website, for part of the June bakes. This one is Dan Lepard’s Raisin and Cinnamon Loaf – The Handmade Loaf – Page 100. Actually quite similar to my Lazy Morning Bread – but made by hand and in a ring.

Just A Little Something (Poppy Seed Loaf)

So we have had a busy weekend away at my sisters wedding and didn’t get back until Sunday evening, so I wanted to make a little something to keep us fed until we had time to hit the supermarket. What better than a poppy seed loaf?

The Mill Loaf

Another day another bread. Again this one is taken from Dan Lepard’s The Handmade Loaf, and is his Mill Loaf – Page 30.

I have made this loaf before, with a few changes as it was my first sourdough. So this time I wanted to follow the recipe a bit closer, with a slightly more developed starter, for a deeper flavour.
